Vegetables, fruit or salami (for example) fall to the knife through a filling shaft by means of gravity.
Even small potatoes or mushrooms can be cut into thin, oval slices at high speed, without residue and without risk of injury.
The thinner you cut meat and vegetables, the more aromas they set free and the more delicately they flatter the palate. It also shortens cooking time.
